Nothing is by chance

The vineyards of San Cobate are located in the Ribera del Duero, in the golden triangle formed by Gumiel de Mercado, La Horra and La Aguilera. This wine region is considered one of the most important in Spain. Our vineyards are located at an altitude ranging from 830 meters to 910 meters.

Before the creation of the D.O. Ribera del Duero, this region was already known as an exceptional land for the production of unique wines.

 

It is necessary to go back to no less than 2,500 years to find the first wine reference in the area.

The entire vineyard is sustainable, the processes and cycles of nature are respected to the maximum. The optimal moment of maturation of each plot to be harvested, is decided by the team of oenologists together with the person in charge of viticulture. The harvest in San Cobate is manual, respectful and expert. Every year, before starting the harvest day, the characteristics of the clusters that are going to be harvested are analyzed together with the harvesters so that they are in perfect sanitary and maturational state. Our team of 16 people, year after year, collect the grapes from the areas and plots selected every day in boxes of 15 kilos.

In San Cobate, three well-differentiated plots stand out and with a special interest due to their altitude, environment, orientation and type of soil conditions: monastery, jalón terraces and Altos del Visó.

This plot is a south-facing hillside located on the nearest lands where the old San Cucufate monastery was located.

The soil is calcareous clayey and the plantation rows are oriented north-south, giving rise to very good maturations, achieving high tannin and polyphenols, and therefore wines with a good aptitude for long aging.

The great characteristic of this area is the variability that exists in a few meters. The sinuous shape of the terraces gives rise to different orientations and different compositions of soil, all together with a difference in level of more than 80 meters from the lowest vineyard to the highest altitude.

In general, they are limestone, poor and shallow land. In the slopes we can find aromatic species that are enhancers of natural aromas and plant barriers.

It is a wasteland of excellent insolation and high altitude, reaching 910 meters. The soil is clayey-calcareous, with such a high level of limestone, that its color is completely white. The continuous aeration it receives gives it an excellent health.

The plot is very rocky. The stones help the maturation of the grape since during the day they accumulate heat that gradually yields during the night. The altitude of the ground helps the conservation of acidity. These extreme conditions give very limited yields and highly concentrated grapes.
