Respect for natural processes

The grape arrives at the winery and as it is received is selected again, destemmed and subtly crushed. Alcoholic fermentation is spontaneous with indigenous yeasts. No additions of oenological products are made. The most important thing about the project is to respect the natural processes of the biochemical reactions that occur at each stage. The vinifications are carried out in concrete tanks.

The aging of wine is done in two phases. The first in barrels of different volumes of French oak, mostly and later in larger capacity tubs where the assembly is done in the case of San Cobate wine. In both cases, the woods used are of various uses, so that the roasts do not aromatize and mask the flavors, aromas and fruits obtained in our wines.
